# SPEECH PRACTICE

Talk about jangjorim, a Korean side dish of marinated meat.

Jangjorim is an ever-present side dish in Korean cuisine.

It is made by marinating meat and quail's eggs in soy sauce.

The cuts of beef used for jangjorim are usually lean meat.

Fatty cuts are not used, since you might get congealed fat later.

At the meat section of the supermarket, you can find meat that is labeled as suitable for jangjorim.

You should chop the beef into pieces and soak them in cold water to remove the blood.

Then, you place the quail's eggs and beef in water with kelp, onions, green onions, and peppercorns.

To remove any gamey smells, you should leave the lid open.

You should also scrape off any foam that forms while boiling.

When it's done, you remove the beef and cool it.

To season janjorim, you need soy sauce, garlic, ginger, sugar, and starch syrup.

 

[해석]

장조림은 한국 음식에서 보편적인 반찬 중 하나이다. 고기와 메추리알을 간장 양념에 재워서 만든다. 장조림을 만들 때 주로 사용되는 쇠고기는 지방질이 적은 부위이다. 기름진 부위는 나중에 지방이 응고되어 덩어리가 질 수 있으므로 사용하지 않는다. 마트의 정육 코너에서 장조림용이라고 표기된 부위를 찾아볼 수 있다.
쇠고기는 토막을 내서 찬물에 담가 핏물을 빼는 것이 좋다. 그러고 나서, 메추리알과 쇠고기를 다시마, 양파, 대파, 그리고 통후추와 함께 물에 넣는다. 고기의 잡내를 제거하려면 뚜껑을 열어 놓아야 한다. 끓이는 동안 생기는 거품도 제거해야 한다. 다 되면 쇠고기를 건져서 식힌다. 장조림의 양념을 할 때는 간장, 마늘, 생강, 설탕, 그리고 물엿이 필요하다.
